Pierale
Moscato IGT Puglia
The name Pierale derives from the contraction of the names Piernicola and Alessandra, Leone De Castris’ last generation. Wine with a straw yellow colour. Sweet taste, in which the distinctive aroma of the grape is well perceivable. Wine obtained from Moscato grapes. Espalier growing system, with a yield of approximately 60 quintals per hectare. Vinification: grapes are left to wither unpicked to allow an advanced ripening; they are picked with great care, carried in boxes to the winery and immediately introduced into a horizontal press for soft pressing. The must obtained is fermented at a temperature of 18°C with selected yeasts. After fermentation, the wine is stored in an autoclave at a temperature of 0°C till bottling. This sweet wine is particularly suited to accompany panettone, pandoro and other cakes. Suggested serving temperature 12 – 13 °C.

VINIFICATION
The grapes are left on the plant to allow an advanced ripening; they are picked with great care, carried in boxes to the winery and immediately put into an horizontal press for soft pressing; the must obtained is fermented at a temperature of 18° C with selected yeasts. A period of refinement will follow on the thin dregs for about 6 months.
TASTING NOTES
This wine is characterized by a gilded yellow colour, a complex perfume of rose, peach, vanilla and a full, soft and warm taste. Particularly suitable to accompany all kind of cakes. Suggested serving at a temperature of 12 – 13° C
