Red IGT Salento
The “Novello” Salentinello is made of 100% carbonic maceration of grapes Negroamaro, Malvasia Nera and Montepulciano. Bright red colour , perfume and taste typically yielded (strawberry, cherry, fishing and apple). Wine for all meal that dearly accompanies the savoury dishes in autumn; suggested on roasted chestnuts and rustic sweets. To be served at temperature of 14-16° C.

VINIFICATION
The carefully selected clusters are introduced in hermetic reservoirs and allowed to soak for 10-12 days at a temperature of 28-30° C in presence of carbonic anhydride. After the pressing the must ferments at a temperature of 18-20° C for about 10 days.
